米紙麵近年喺網上面好紅,如果加埋我哋隻勁正辣脆,你就會明點解個個都話食到停唔到口。口感滑捋捋、煙煙韌韌,加埋香辣味,真係好夾。而且10分鐘就搞掂,絕對係快靚正之選。

材料 (2人份)
- 米紙 4張
- 勁正辣脆 2湯匙
- 生抽 1湯匙
- 麻油 1茶匙
- 米醋 1茶匙
- 蒜頭 2瓣(切碎)
- 蔥 2條(切成蔥花)
- 炒香嘅白芝麻 1湯匙
- 溏心蛋 1隻(可以唔落)
- 青瓜絲 或 灼菠菜(隨你鍾意)
做法
1. 整米紙麵
將米紙放入微暖水浸大約30至45秒,浸到軟身就得。將兩張疊埋一齊,然後切成大約1cm闊嘅條狀。切出嚟嘅麵條會半透明,口感又滑又煙韌,咁樣就最掛汁。
2. 調醬汁
喺個碗度,將生抽、麻油、米醋同蒜蓉撈勻做個醬汁。
3. 撈勻
將米紙麵放入醬汁度撈勻,然後畢兩大羹勁正辣脆落去,辣油同香味,就係成個麵嘅精髓。
4. 上碟
將撈好嘅麵分落兩個碗度,鋪返啲蔥花、芝麻同溏心蛋上去。最後可以再淋多啲辣油喺面,睇落靚啲,食落又香啲。

Viral Rice Paper Noodles with Divine Chilli Crisps

Ingredients (Serves 2)
- 4 sheets dried rice paper
- 2 heaped tbsp Divine Chilli Crisps
- 1 tbsp light soy sauce
- 1 tsp sesame oil
- 1 tsp rice vinegar
- 2 cloves garlic, minced
- 2 spring onions, thinly sliced
- 1 tbsp toasted sesame seeds
- 1 soft-boiled egg per serving (optional but highly recommended)
- Cucumber julienne or blanched spinach (optional)
Method
Step 1 — Make the noodles
Soak rice paper sheets in lukewarm water for 30–45 seconds until just pliable. Stack 2 sheets together and slice into 1cm strips. They'll be silky, translucent, and slightly chewy — perfect for catching all that sauce.
Step 2 — Mix the sauce
In a bowl, combine soy sauce, sesame oil, rice vinegar, and minced garlic. Stir well.
Step 3 — Toss
Add the rice paper noodles to the sauce and toss to coat. Then spoon in 2 generous tablespoons of Divine Chilli Crisps — don't be shy. The crispy bits, the amber oil, the heat — this is where the magic happens.
Step 4 — Plate & garnish
Divide into bowls. Top with spring onions, sesame seeds, and a halved soft-boiled egg. Drizzle a little extra chilli oil from the jar over the top.
