呢個食譜之所以喺 Tiktok 爆紅,係因為做法簡單,但味道遠超你想像。蛋保持嫩滑,芝士邊緣變得香脆,蜜糖同辣脆喺底部形成甜辣醬汁。

材料

  • 2隻雞蛋
  • ⅓杯新鮮刨絲 Monterey Jack 芝士(用其他芝士都得)
  • 1湯匙蜜糖
  • 2茶匙勁正辣脆
  • 鹽、黑椒、新鮮香草適量
  • 1片酸種麵包

做法

Step 1 — 落蜜糖同勁正辣脆 

首先,喺個平底鑊度淋啲蜜糖同勁正辣脆,開中細火慢慢加熱。將啲醬輕輕推開,整平個底,等陣啲蛋同芝士可以平均受熱。

Step 2 — 加芝士 

跟住將啲芝士碎均勻咁撒喺蜜糖勁正辣脆上面,煮到啲芝士開始溶、變軟就得㗎喇。

Step 3 — 打蛋 

直接打兩隻雞蛋落啲芝士上面。煮到蛋白凝固,個蛋黃就睇你鍾意食生啲定熟啲啦。呢個時候,兜底啲芝士邊邊會變到金黃色、脆卜卜,勁香!

Step 4 — 烘麵包 

趁住煮緊蛋嗰陣,將塊酸種麵包(Sourdough)拎去烘到金黃香脆。

Step 5 — 摺埋上碟 

輕輕將隻蛋同脆卜卜嘅芝士對摺,然後成份嘢滑上塊麵包度。最後灑啲鹽、黑椒同你鍾意嘅新鮮香草上去。搞掂,即刻趁熱食啦!

小貼士

  • 火喉最緊要 — 記住要用中細火,唔好心急,如果唔係啲蜜糖好易燶㗎!
  • 最好自己刨芝士 — 因為出面買嗰啲一包包嘅芝士碎,通常有啲防潮粉,會搞到個芝士底冇咁脆口。
  • 勁正辣脆唔好慳 — 落多啲!因為我哋用牛油果油做底,啲辣味可以好完美咁融入成個醬汁度,超夾!

Instructions

Step 1 — Add the honey and Divine Chilli Crisps

Drizzle the honey and Divine Chilli Crisps into a medium skillet and place it over medium-low heat. Spread it out slightly so the eggs and cheese cook over the sweet and spicy mixture evenly.

Step 2 — Add the cheese

Sprinkle the shredded Monterey Jack cheese over the honey and Divine Chilli Crisps. Let it heat just until the cheese starts to melt and soften.

Step 3 — Crack in the eggs

Crack the 2 eggs right on top of the cheese. Let them cook until the whites are set, the yolks reach your preferred doneness, and the cheese underneath turns crisp and golden around the edges.

Step 4 — Toast the bread

While the eggs cook, toast your sourdough slice until golden and crisp.

Step 5 — Fold and serve

Gently fold the eggs and crispy cheese over, then slide them onto the toasted sourdough. Finish with salt, pepper, and fresh herbs. Serve right away.
