Baba Ghanoush 係經典中東煙燻茄子醬,creamy 綿滑、帶煙燻香氣,本身已經係一道令人難以抗拒的前菜。但今次,我哋用 返尋味辣油 為佢注入全新嘅演繹,多咗鮮辣 umami 層次,務求做到辣而不燥,香而不膩,等大家可以試吓Baba Ghanoush嘅新食法。
最重要係完全生酮友善(Keto-friendly),無糖、無防腐劑,低碳水,食得放心。
食材
(4-6人份)
- 大茄子 2 條(約 800g)
- 芝麻醬 Tahini 3 湯匙
- 蒜頭 2 瓣(壓蓉)
- 檸檬汁 2 湯匙(新鮮榨)
- 以返尋味辣油代替初榨橄欖油 2 湯匙
- 鹽 適量
- 新鮮番茜 (Parsley) 少少(裝飾用,可省略)
- 石榴籽 少許(裝飾用,可省略)
- 芝麻 少許(裝飾用,可省略)
做法
第一步:燒茄子
將茄子直接放喺明火上面燒,或者放入焗爐用 220°C 焗大約 30–40 分鐘,中途要反一反佢,燒到個皮燶晒、入面淋晒為止。攤凍咗之後,就搣走塊皮,再將啲茄子肉榨乾水份。
第二步:混合材料
將茄子肉、芝麻醬、蒜蓉、檸檬汁、返尋味辣油同鹽,全部放入攪拌機打勻;如果你想食到有啲口感,可以唔用機,直接用叉壓爛佢,咁樣會保留到啲質感。
第三步:調味
試下味,睇下使唔使再加鹽、檸檬汁或者芝麻醬,校到啱自己口味為止。
第四步:上碟
將整好嘅茄子醬裝落個碗度,用匙羹背喺面頭畫個圈整返個紋。最後淋少少我哋隻返尋味辣油,再灑啲番茜、石榴籽同芝麻做裝飾。
即刻食得!配返暖嘅 keto pita bread或者就咁點蔬菜條(好似青瓜、西芹條)都超好食!

Spicy Baba Ghanoush

The added layer of spicy umami brings new depth to the dish, creating a balance that is bold yet not overpowering, fragrant yet never heavy. Ingredients
(Serves 4–6)
- 2 large eggplants (approx. 800g)
- 3 tbsp tahini
- 2 cloves garlic, minced
- 2 tbsp fresh lemon juice
- 2 tbsp Moreish Chilli Oil (in place of extra virgin olive oil)
- Salt to taste
- Fresh flat-leaf parsley, to garnish (optional)
- Pomegranate seeds, to garnish (optional)
- Sesame seeds, to garnish (optional)
Method
Step 1: Char the eggplants
Place eggplants directly over an open flame or roast in an oven at 220°C for 30–40 minutes, turning once, until the skin is completely charred and the flesh is soft. Allow to cool, then peel and drain off any excess liquid.
Step 2: Blend
Combine the eggplant flesh, tahini, garlic, lemon juice, Moreish Chilli Oil, and salt in a blender or food processor. For a more rustic texture, mash by hand with a fork.
Step 3: Taste and adjust
Season to taste — adjust salt, lemon, or tahini to your preference.
Step 4: Plate and finish
Spoon into a serving bowl and use the back of a spoon to create a swirl. Drizzle with Moreish Chilli Oil, then scatter over parsley, pomegranate seeds, and sesame.
Serve immediately with warm pita or vegetable crudités.
