匈牙利甜椒燴雞配返尋味辣油

匈牙利甜椒燴雞 (csirkepaprikás),係我哋腦細年輕時喺匈牙利接待家庭成日食嘅一道家常菜,充滿住溫暖嘅回憶。

而家,我哋為呢道經典菜式搞搞新意思,喺上碟前淋上我哋嘅返尋味辣油,除咗加添一點酸辣,仲帶出淡淡嘅亞洲鮮味。濃郁幼滑嘅甜椒醬汁,遇上層次豐富嘅返尋味辣油,令人一試難忘。

材料:

  • 連骨雞髀 1公斤
  • 大洋蔥 2個,切片
  • 甜紅椒粉 (Sweet Paprika) 3湯匙
  • 返尋味辣油 2-3湯匙 
  • 酸忌廉 (Sour Cream) 200毫升
  • 甜燈籠椒(咩顏色都得) 2個,切片
  • 蒜頭 3瓣,切成蒜蓉
  • 雞湯 250毫升
  • 牛油 2湯匙
  • 鹽同黑椒 適量
  • 新鮮蒔蘿 (Dill) 裝飾用(隨意)

做法:

  1. 雞髀用鹽同黑椒醃一醃,然後落牛油將雞皮煎到金黃色。
  2. 先將雞髀拎起,然後用返個鑊炒香洋蔥同燈籠椒,直到變軟。
  3. 加入蒜蓉同紅椒粉,炒多 1 分鐘,炒出香味。
  4. 將雞髀擺返落鑊,加入雞湯,蓋上蓋用慢火炆 35 分鐘。
  5. 再次拎起雞髀,將酸忌廉加入醬汁度搞勻。
  6. 將雞髀放返入醬汁,煮熱佢就得。
  7. 上碟前,按你喜好淋上返尋味辣油。
  8. 最後用新鮮蒔蘿做裝飾就搞掂!趁熱食最好味。

Hungarian chicken paprikash was a comforting, home-style meal our founder grew up enjoying with his host family in Hungary. We’ve put a fresh spin on this classic by finishing it with a drizzle of our Moreish Chilli Oil, adding a spicy kick and subtle Asian umami notes. The rich, creamy paprika sauce meets fiery chilli oil for an unforgettable fusion.

Ingredients:

  • 1kg chicken thighs, bone-in
  • 2 large onions, sliced
  • 3 tbsp sweet paprika
  • 2-3 tbsp Moreish Chilli Oil
  • 200ml sour cream
  • 2 sweet bell peppers (any colour), sliced
  • 3 cloves garlic, minced
  • 250ml chicken stock
  • 2 tbsp butter
  • Salt and pepper to taste
  • Fresh dill for garnish (optional)

Method:

  1. Season chicken with salt and pepper, brown in butter
  2. Remove chicken, sauté onions and peppers until soft
  3. Add garlic and paprika, cook for 1 minute
  4. Return chicken to pan, add stock, simmer covered for 35 minutes
  5. Remove chicken, stir sour cream into sauce
  6. Return chicken to sauce, warm through
  7. Drizzle generously with Moreish Chilli Oil before serving
  8. Garnish with fresh dill
