匈牙利甜椒燴雞配返尋味辣油
匈牙利甜椒燴雞 (csirkepaprikás),係我哋腦細年輕時喺匈牙利接待家庭成日食嘅一道家常菜,充滿住溫暖嘅回憶。
而家,我哋為呢道經典菜式搞搞新意思,喺上碟前淋上我哋嘅返尋味辣油,除咗加添一點酸辣,仲帶出淡淡嘅亞洲鮮味。濃郁幼滑嘅甜椒醬汁,遇上層次豐富嘅返尋味辣油,令人一試難忘。
材料:
- 連骨雞髀 1公斤
- 大洋蔥 2個,切片
- 甜紅椒粉 (Sweet Paprika) 3湯匙
- 返尋味辣油 2-3湯匙
- 酸忌廉 (Sour Cream) 200毫升
- 甜燈籠椒(咩顏色都得) 2個,切片
- 蒜頭 3瓣,切成蒜蓉
- 雞湯 250毫升
- 牛油 2湯匙
- 鹽同黑椒 適量
- 新鮮蒔蘿 (Dill) 裝飾用(隨意)
做法:
- 雞髀用鹽同黑椒醃一醃,然後落牛油將雞皮煎到金黃色。
- 先將雞髀拎起,然後用返個鑊炒香洋蔥同燈籠椒,直到變軟。
- 加入蒜蓉同紅椒粉,炒多 1 分鐘,炒出香味。
- 將雞髀擺返落鑊,加入雞湯,蓋上蓋用慢火炆 35 分鐘。
- 再次拎起雞髀,將酸忌廉加入醬汁度搞勻。
- 將雞髀放返入醬汁,煮熱佢就得。
- 上碟前,按你喜好淋上返尋味辣油。
- 最後用新鮮蒔蘿做裝飾就搞掂!趁熱食最好味。
Hungarian chicken paprikash was a comforting, home-style meal our founder grew up enjoying with his host family in Hungary. We’ve put a fresh spin on this classic by finishing it with a drizzle of our Moreish Chilli Oil, adding a spicy kick and subtle Asian umami notes. The rich, creamy paprika sauce meets fiery chilli oil for an unforgettable fusion.
Ingredients:
- 1kg chicken thighs, bone-in
- 2 large onions, sliced
- 3 tbsp sweet paprika
- 2-3 tbsp Moreish Chilli Oil
- 200ml sour cream
- 2 sweet bell peppers (any colour), sliced
- 3 cloves garlic, minced
- 250ml chicken stock
- 2 tbsp butter
- Salt and pepper to taste
- Fresh dill for garnish (optional)
Method:
- Season chicken with salt and pepper, brown in butter
- Remove chicken, sauté onions and peppers until soft
- Add garlic and paprika, cook for 1 minute
- Return chicken to pan, add stock, simmer covered for 35 minutes
- Remove chicken, stir sour cream into sauce
- Return chicken to sauce, warm through
- Drizzle generously with Moreish Chilli Oil before serving
- Garnish with fresh dill
