你有冇試過,打開雪櫃諗緊食乜好,但又懶得出街或者叫外賣?呢個食譜就啱晒你啦。只要有一樽我哋嘅勁正辣脆,加埋幾樣簡單嘅材料,15分鐘就煮到一碗又香又辣、口感十足嘅撈刀削麵。

刀削麵夠厚身、口感煙韌彈牙,最啱就係用嚟掛住啲辣脆醬汁。包你一啖食落去,齊晒辣、香、鮮、脆,個層次豐富到你唔捨得吞!

點解要用刀削麵?

刀削麵(Knife-Cut Noodles)係北方麵食,特色係麵身厚薄唔均勻,食落特別有咬口,比起普通幼麵更加掛汁。配埋勁正辣脆,啖啖都係驚喜。

材料 (2人份)

麵底(揀一款):

  • 刀削麵 200g(新鮮或乾麵均可)
  • 生酮替代:蒟蒻麵或翠玉瓜麵

醬汁:

  • 勁正辣脆 2–3 湯匙 ← 主角
  • 生抽 2 湯匙(無麩質可用 tamari)
  • 米醋 1 湯匙
  • 麻油 1 茶匙
  • 煮麵水 1 湯匙(令醬汁更滑)
  • 阿洛酮糖少許(可以唔落,因為辣脆本身已經有少少甜味)

配料:

  • 溏心蛋 1隻(烚6分半鐘就搞掂)
  • 青瓜絲或灼熟小棠菜
  • 蔥花、白芝麻
  • 額外加多羹勁正辣脆喺面頭 一 靈魂所在,唔可以冇!

做法

  1. 煮麵 —  跟返包裝上嘅指示煮熟刀削麵,留返大約¼杯煮麵水備用,然後將麵瀝乾。
  2. 調醬 — 喺個大碗度,將辣脆、生抽、米醋、麻油同煮麵水撈勻。
  3. 撈麵 — 趁熱將麵放入醬汁個碗度,快手撈勻,確保每條麵都均勻咁沾滿醬汁。
  4. 擺碟 — 鋪返啲配料上去,例如溏心蛋、青瓜絲、蔥花、芝麻,最後喺面頭淋多一羹勁正辣脆
  5. 即刻食 — 嗱嗱聲趁熱食,口感最正!

Divine Chilli Crisps - Spoon Texture Shot

We've all been there, staring into the fridge with no idea what to cook, but too bored to order in. This recipe is your answer. With a jar of Divine Chilli Crisps and a handful of pantry staples, you're 15 minutes away from a bowl of deeply flavourful, spicy, textured noodles that hits every note.

Knife-cut noodles are the perfect vehicle, thick, chewy, and irregular enough to catch every bit of that chunky, oily, aromatic chilli crisp sauce.

Why Knife-Cut Noodles?

Knife-cut noodles (刀削麵) are a northern Chinese staple with a thick, uneven cut that gives them a wonderfully chewy bite. Unlike thin noodles, they hold onto bold sauces beautifully, making them the ideal match for our Divine Chilli Crisps.

Ingredients (Serves 2)

Noodle base (choose one):

  • 200g knife-cut noodles, fresh or dried
  • Keto swap: konjac noodles or zucchini noodles

The sauce:

  • Divine Chilli Crisps 2–3 tbsp ← the hero
  • 2 tbsp soy sauce (or tamari for gluten-free)
  • 1 tbsp rice vinegar
  • 1 tsp sesame oil
  • 1 tbsp reserved noodle water
  • Pinch of allulose (optional — already in the crisps)

Toppings:

  • 1 jammy soft-boiled egg (6.5 minutes)
  • Cucumber strips or blanched bok choy
  • Spring onion, toasted sesame seeds
  • Extra spoonful of Divine Chilli Crisps on top ← non-negotiable

Method

  1. Cook the noodles per packet instructions. Reserve ¼ cup of noodle water, then drain.
  2. Mix the sauce in your serving bowl, combine the chilli crisps, soy sauce, rice vinegar, sesame oil, and noodle water.
  3. Toss the hot noodles straight into the bowl and mix well until every strand is coated.
  4. Top with egg, cucumber, spring onion, sesame seeds, and a generous extra spoonful of Divine Chilli Crisps.
  5. Serve immediately for the best texture and flavour.

Making It Keto

Swap the knife-cut noodles for konjac noodles and this dish is fully keto. Divine Chilli Crisps is already keto-friendly, made with avocado oil, naturally low-carb and sugar-free. Just skip any added sweetener in the sauce and you're good to go.
