一樽搞掂,唔使加任何調味料
天氣咁熱,煮飯都唔想開火太耐。今次介紹一個超簡單嘅夏日涼拌菜,返尋味辣油拌萵筍絲,全程唔使開爐,只需要一樽返尋味辣油,幾分鐘搞掂,清爽又開胃。
點解唔使加其他調味料?
因為我哋嘅返尋味辣油本身已經係一個完整嘅調味系統:
- 醃製蒜頭同辣椒 — 帶嚟天然嘅香辣味、鹹香同微微嘅酸度,唔使另外加鹽或醋
- 豆豉 — 深層次嘅鮮味同甘香,係令整個涼拌菜有靈魂嘅關鍵
一樽辣椒油,已經係鮮、辣、鹹、酸、香五味俱全。夏天涼拌,就係咁簡單。
食材(2人份)
- 萵筍(去皮切絲)適量
- 返尋味辣油 2–3 湯匙(或按個人口味調整)
- 海鹽 1-2茶匙(用嚟醃萵筍去水)
想再辣啲? 用 返尋味辣油 (辣到黐筋),同樣係一樽搞掂,唔使加任何嘢。
做法
- 萵筍去皮、切絲,加1-2茶匙海鹽撈勻,靜置 10 分鐘等佢出水
- 用手輕輕擠走多餘水分,令萵筍絲更爽脆
- 加入 2–3 湯匙返尋味辣油,撈勻
- 可以即食,或者放入雪櫃冷藏 15 分鐘再食,更加清爽!

Cold Celtuce with Moreish Chilli Oil
One Jar, No Extra Seasoning Needed
When it's this hot outside, the last thing you want is to spend time over a stove. This cold celtuce dish takes minutes, requires zero cooking, and uses exactly one condiment: Moreish Chilli Oil.
Why no extra seasoning?
Because Moreish Chilli Oil is already a complete flavour profile in a jar:
- Pickled garlic and chillies, spicy, naturally umami, savoury, and gently tart. No need for soy sauce or vinegar.
- Fermented black beans (douchi), deep, layered umami that gives this dish its soul and complexity
One jar does it all. That's the whole point.
Ingredients (Serves 2)
- Celtuce, peeled and julienned, as needed
- Moreish Chilli Oil, 2–3 tbsp, or to taste
- Sea salt, 1-2 tsp (for drawing out moisture)

Method
- Peel and julienne the celtuce. Toss with a pinch of 1-2 tsp of salt and let sit for 10 minutes to draw out excess moisture.
- Gently squeeze out the water with your hands, this keeps the celtuce crisp.
- Add 2–3 tbsp of Moreish Chilli Oil and toss well to coat.
- Serve immediately, or refrigerate for 15 minutes for an extra-refreshing cold dish.
