峇里島雜錦飯配返尋味辣油香料醬
我哋將正宗嘅峇里島香料醬 (bumbu),Crossover 埋我哋隻獨家炮製嘅返尋味辣油!
辣油嗰種香、麻、辣,撞上 bumbu 嗰種複雜又充滿東南亞風味嘅香料,兩樣嘢撈埋一齊,唔單止冇搶走大家嘅味道,反而產生咗一種化學作用!
材料(4人份)
返尋味辣油香料醬:
- 3湯匙 返尋味辣油
- 5瓣 蒜頭,切碎
- 3粒 紅蔥頭,切碎
- 2條 紅辣椒
- 1茶匙 蝦醬(terasi)
- 1茶匙 薑黃粉
- 1茶匙 芫荽籽
- ½茶匙 黑胡椒
- 2片 南薑
- 2條 香茅,只用白色部分
- 適量 鹽
雜錦飯配料:
- 4碗 白飯
- 200克 雞肉,切絲
- 4條 峇里島肉串(sate lilit)
- 100克 天貝,切片炸香
- 1束 通菜(kangkung),炒香
- 4隻 雞蛋,煎至半熟
- 適量 峇里島生辣椒醬(sambal matah)
- 適量 炸蝦片
做法
製作返尋味辣油香料醬:
- 將蒜頭、紅蔥頭、紅辣椒、南薑、香茅、芫荽籽放入攪拌機打成幼滑醬料。
- 中火燒熱鑊,加入2湯匙返尋味辣油。
- 加入打好嘅香料醬、蝦醬、薑黃粉同黑胡椒,炒香約5-7分鐘至香味四溢。
- 加入最後1湯匙返尋味辣油,拌勻後熄火。調味後備用。
組合雜錦飯:
- 用返尋味辣油香料醬醃雞肉30分鐘,然後煮熟切絲。
- 將白飯放喺碟中央。
- 圍住白飯擺放雞絲、肉串、炸天貝、炒通菜、煎蛋同sambal matah。
- 喺旁邊放一小碗返尋味辣油香料醬。
- 灑上炸蝦片,即可享用。

- 返尋味辣油香料醬可以預先製作,放雪櫃可保存一星期。
- 呢個香料醬亦適合用於其他印尼菜式,如炒飯或炒麵。
- 可按個人口味調整辣油份量。
Balinese Nasi Campur with Moreish Chilli Oil Bumbu
Elevate the classic Balinese mixed rice by incorporating our Moreish Chilli Oil into traditional bumbu (spice paste). This recipe fuses the artisanal heat of our handcrafted chilli oil with authentic Indonesian aromatics for a unique flavor experience.
Ingredients (Serves 4)
Moreish Chilli Oil Bumbu:
- 3 tablespoons Moreish Chilli Oil
- 5 cloves garlic, minced
- 3 shallots, minced
- 2 red chillies
- 1 teaspoon shrimp paste (terasi)
- 1 teaspoon turmeric powder
- 1 teaspoon coriander seeds
- ½ teaspoon black pepper
- 2 slices galangal
- 2 stalks lemongrass, white part only
- Salt to taste
Nasi Campur Components:
- 4 bowls steamed white rice
- 200g chicken, shredded
- 4 pieces sate lilit (Balinese minced meat satay)
- 100g tempeh, sliced and fried
- 1 bunch water spinach (kangkung), stir-fried
- 4 eggs, fried sunny-side up
- Sambal matah (Balinese raw chilli relish)
- Prawn crackers
Method
Prepare Moreish Chilli Oil Bumbu:
- Blend garlic, shallots, red chillies, galangal, lemongrass, and coriander seeds into a smooth paste.
- Heat 2 tablespoons of Moreish Chilli Oil in a pan over medium heat.
- Add the spice paste, shrimp paste, turmeric, and black pepper. Sauté for 5-7 minutes until fragrant.
- Stir in the remaining 1 tablespoon of Moreish Chilli Oil. Season with salt and set aside.
Assemble Nasi Campur:
- Marinate chicken in the Moreish Chilli Oil bumbu for 30 minutes, then cook and shred.
- Place steamed rice in the center of each plate.
- Arrange small portions of shredded chicken, sate lilit, fried tempeh, stir-fried kangkung, fried egg, and sambal matah around the rice.
- Serve with a small bowl of Moreish Chilli Oil bumbu on the side.
- Garnish with prawn crackers and serve immediately.
Tips
- The Moreish Chilli Oil bumbu can be made ahead and stored in the refrigerator for up to one week.
- This bumbu works beautifully with other Indonesian dishes like fried rice or noodles.
- Adjust the amount of chilli oil to suit your heat preference.
